The medina is a walled maze and getting lost in it is not optional, so treat the Koutoubia minaret as your compass: it is visible from most of the old city and nothing may be built taller. Agree every price before you accept anything, including directions. The square is a different place at dusk, when the food stalls go up.

  1. Jemaa el-Fnaa

    Snake charmers and orange juice by day, a hundred food stalls after sunset. UNESCO lists it for the storytelling, not the buildings.
